G.B. Shaw nailed it when he said in Man and Superman, there’s no love sincere than love of food.
 
A fit healthy body and a tasty tongue- that’s the best fashion statement for me.
 
Having said that, now its time to talk of diet. Vegetables are must on a diet. 
Potatoes, wholemeal bread and handful of Sev (crispy noodle made of chickpea flour) 
are my suggestions.


Next comes exercise, and no matter what, take to brisk walking. 
Find the street which sells the most appetizing street snacks. 
Trust me it will encourage you to take up walking. 

The street food served in Mumbai are generally fresh, tasty and wallet friendly. 
The most popular street-food in Mumbai is Vada Pav and then comes Pav bhaji. 
But running on the parallel likes, is the famous Mumbai Masala Toast Sandwich.
 
This hot toasted-aromatic sandwhich is sold by many vendors near railway stations, 
in front of schools, malls and offices in Mumbai.

The Sandwich is prepared by putting boiled potatoes, peas, salt, 
chaat masala powder in between two slices of bread and grilled.
Then the bread slices are covered with butter and green-corriander-mint- chatni. 

To spice up the stuffing, more veges are added like finely sliced onion, tomato and capsicum, 
the sandwich is then grilled over a gas stove with the black-grooved metal tava. 
Before serving a generous layer of butter and green chatni is applied then its laced with the Sev.

Every bite gives you the super filling of masala taste.
 
Now living in HCMC, the street food is going to be palate friendly for the locals. 
So if the craving for Masala toast Sandwhich happens, you’ve got to get it made at home.

Jogging the memory lane and reinventing the Mumbai street food at home.
 
Recipe- Masala Toast Sandwhich.

Prep time: 20mins; Cooking time : approximately- 25 mins; 
Total time spent in Kitchen: 45 mins.

Ingredients for Green Chatni
 
100 gms fresh Coriander
3-4 fresh green chilies (depends on your love for spiciness)
½ fresh lemon
salt to taste
1 ts. spoon sugar.
 
Prep: Put the mixture in a mixie and grind to a smooth paste. Pour and keep aside in a bowl.
 
Hero Ingredients:
 
2 mid sized potatoes (boiled, peeled and smashed)
1 tomato (small)
1 capsicum (small)
1 shallot-onion (small)
100 gms peas (boiled)
½ ts. spoon chaat masala (alternative could be (1/2 sliced lemon)
few strands of feshly chooped coriander
sliced bread (I used whole-grain bread)
2 tbs olive oil (cooking oil works well too.)
finely chopped garlic and ginger. 1 teaspoon each.
½ tsp cumin seed, ½ tsp fenugreek seeds 
(Not necessary, if have will work well. It adds the aromatic flavour)
1 packet of Sev (you can buy it in any Indian stores in HCMC, 
there are couple of them on Ham-Ngi street, Q1)
 
Preparation:
 
Heat a pan, add the oil, pop-in the Cumin-fenugreek seeds, 
dash-in the finely chopped garlic-ginger; sauté.
Add the finely chopped onions and capsicum; sauté, 
add the green peas and smashed potatoes, pinch of salt, mix well. 
Now add thinly sliced tomatoes and coriander, mix well 
add ½ tspoon chaat masala. Mix thoroughly.
 
Take the slices of bread, to one slice, layer it with the green chatni, the other slice add butter.
Put the stuffing in between the two slices and grill it.
 
If doing at home usually most houses have a toaster-griller. 
Just in case you are short of it. You can do it on the same frying pan.
 
Once grilled, apply generously, melted butter, green chatni on the outer slice and add Sev, and Serve.
 
This is a wholesome snack, you can pair it with coffee/tea (iced/hot).
